Found the following article with a clear review of research into type 1 diabetes.

It points out that the thymus has the job of getting rid of self-reactive T-cells. To do this the thymus knows how to produce all body proteins including insulin. Stuff (like ingap) that recreates the environment of the young body might allow the thymus to produce more insulin and thus knock out more bad T-cells. I haven't seen this mentioned, but it seems reasonable to me.
