The best immunology book I've found is 'Immunobiology' by Janeway & Travers (now in the 4th Edition). It's not particularly a guide for dummies (it's a standard undergraduate text....), but is clearly laid out. At any rate, I found it suitably accessible when I had to learn immunology 3 years ago from a background in pharmacolgy!
